My apologies for taking so long to reply.  I was terribly busy at work at the time and completely forgot to check on the site.  Anyway...

Using unsweetened chocolate allows one to better control the sweetness of the final product.  Certainly, you may use whatever chocolate is available to you.  However, if substituting sweet chocolate, you would probably want to reduce the amount of sugar added.

Not sure the reason for using Kosher Salt.  That is what was given to me in the recipe by an old friend, many years ago.  Kosher Salt is generally in larger crystals than regular salt.  Perhaps it helps lends to a &quot;je ne sais quoi&quot; of sweet and salty, along with the peanuts.
But again...
One may use what they have available to them.
